I picked up the BBC Good Food guide Quick Suppers magazine for Autumn 2011 (honestly, they don’t sponsor me. Although if they’re reading this and want to send me large sums of money a free magazine subscription, then I obviously wouldn’t say no…) and this crunchy chicken recipe was one of the ones featured.

Mondays are always a little manic- the combination of first day of the working week and the ebullient enthusiasm of our cub pack mean that I’m pretty wiped by the time I get home, so I’m always looking for something that won’t take much time, effort or brain-power but tastes nice. This was pretty scrummy and wonderfully straightforward. 20 minutes, five ingredients – win.

Quick and simple, these are rather moreish and take no time at all to put together. I used a BBC Good Food recipe from this month’s magazine, but substituted home-made tomato sauce for their suggestion of tomato purée.

This could have been improved with thinly sliced red pepper on top and a green salad side.

Chili cheese nachos

Tortilla chips loaded with leftovers from yesterday’s chili, topped with cheese and baked until melted. Served with guacamole and sour cream. Easy, and perfect to soak up Friday night ciders.

Black bean and beef chili

Yet another recipe from the BBC Good Food site, this slow-cooked chili with diced beef is a world away from the minced beef and kidney beans chili that I used to make. We made it a few days in advance and gave it time for the taste to intensify in the fridge. The contrast in textures and flavour is far more sophisticated and although it’s spicier it’s a much subtler and more enduring heat.

H is slowly coming round to wild rice, which has been a favourite of mine since I was in my teens. The rich nuttiness adds an extra dimension to the dish. This was delicious without any extra accompaniments – no need for salad or grated cheese. Simple, slow and incredibly tasty.

Quick, simple, easy and tasty, although not remarkable, this was a lovely little BBC Good Food recipe which could be rustled together with a handful of ingredients in no more than twenty minutes. A handy little meal to knock up after a long day in work.
