Rigatoni with Parma ham & baby plum tomatoes

Quick, simple, light and delicious, this BBC Good Food meal can be knocked up in less than fifteen minutes and all the ingredients are easy to pick up.

Loads of fresh-cracked black pepper, but you can't really see the mozzarella or the baby plum tomatoes. They're there, honest!

I loved it and would happily have it again: H wasn’t so fussed. I’m more of a pasta fan than he is and he’s never been that fond of tomatoes, so it’s not unduly surprising. It would be easy to think that this meal was too dry, but the tomatoes provide just enough sauce.

I’ll be having this again with a large glass of rosé and watching Blades of Glory the next time he’s away overnight (once the challenge is completed, obviously). I so know how to rock the Casbah!
