Chicken and bacon salad with chicory

At some point I’m going to sit down and tot up all the new ingredients that have made their way into our cooking as a result of this challenge (courgette, chorizo and cous cous all spring to mind – and that’s just the Cs!). It’s been a real adventure, so I’m planning to make a concerted effort to use a new ingredient every week – probably on a Tuesday. Starting today with another ‘C’ – chicory, and a handy little recipe from BBC Good Food.

Super summer salad

As it goes, the chicory (or endive) didn’t really add much. It’s mildly bitter and although it adds bulk it doesn’t do much for the combination of flavours. The chicken in a yoghurt, mustard and spring onion dressing is a great way to use up a leftover roast and bacon is a welcome addition to most meals. In the future I’d use less red onion, more finely chopped, and a gem lettuce in place of the chicory. Rather nice for a warm summer evening.
