A very lazy Sunday roast

I’ve been wrapped up in a world of Prezi for the greater part of today, so tonight’s meal is something of an afterthought. A simple roast chicken involves very little effort and wafts tantalisingly from the kitchen, much to the irritation of the cat.

Rather than faff about with roast potatoes we have a medley of courgettes, red onion and peppers roasted with chopped leftover pepperoni and accompanied by green beans, broccoli, mangetout and alphabetti, all drizzled with a simple gravy  made from the juices of the bird.

Stunning colours, vivid flavours

To roast the chicken squeeze a lemon over and tuck the remnants in the cavity of the bird with half a red onion. Rub with butter, season with cracked sea salt and black pepper,and roast upside-down for the first hour to stop the breast-meat from getting dry. Simples.
