Pepper & pepperoni tart

Today we watched the excellent Everyman Festival production of the Pirates of Penzance at St Fagan’s. This is the third year I’ve been (fourth production) and I’m consistently impressed by the acting, choreography, set, costumes and wit of the production. Stunningly well done.

We stopped for refreshing drinks afterwards, so tonight’s meal is intentionally easy.

Straight from the oven

It’s a funky Jus-Rol recipe, using the pastry leftover from last week’s chicken pie. As well as being very simple to knock together (sliced pepper, pepperoni and red onion on a pastry base topped with grated cheeses and baked),  it’s delicious served with nothing more than sliced and seasoned tomatoes alongside crisp salad leaves.

Juicy tomato salad and crisp lettuce leaves make a delicious accompaniment

The original recipe calls for a base of tomato sauce or pesto, but it’s not necessary at all – there’s plenty of flavour here as it is.
