Fettucine with watercress pesto

A Thursday vegetarian special from the BBC Good Food website, this takes just twenty minutes to knock together. The creaminess of the mozzarella is a fabulous partner to the peppery spice of the watercress.

Five ingredients and 20 minutes - midweek winner

This is quite more-ish, although the pine-nuts would have been better toasted. For carnivores you could easily add some grilled bacon.
