Chicken and rice pepper stew with pesto

Very loosely based on a BBC Good Food recipe, this is a simple one-pot that’s hot and tasty.

Served in bowls with a topping of pesto

Our version is soupier than theirs, which uses a much more absorbent rice and looks a little like risotto. I wouldn’t have thought to add the pesto, but it really adds an extra dimension to the combination of flavours.
