Chorizo and basil flatbread pizza

Jennifer Farnell of Reciplace describes her chorizo and basil pizza as a meal so nice “I want to eat this every night for the rest of my life”. She’s quite right – it’s lush. And you can rustle it up in just quarter of an hour.

I couldn’t get hold of Turkish lavash bread, so used a flatbread and went chunky with the rest of the ingredients. It was quick, simple, messy and delicious. I’d never have thought of using this as a pizza base, or of dotting sundried tomatoes on a layer of blitzed basil leaves rather than using a tomato sauce. It’s so rich that a really pared-down side of  sliced avocado with a squeeze of lemon is the perfect accompaniment.
