An Uttar Pradesh chickpea and chapati meal

I was out this evening with colleagues from work, so cheated by doing most of the cooking for tonight’s meal yesterday. As with most Thursdays it’s a vegetarian dish (vegan actually, in this instance, unless you serve it with yoghurt). As is so often the case, this is a BBC Good Food recipe. My license fee payments are a steal when you consider how much I get from that site.

Ready to wrap

It was warm, spicy and nutritious, but not quite as tasty as the vegetarian fajitas we had earlier in the week and I’m holding out higher hopes for  the aubergine, tamarind and chickpea stew I have planned for Saturday. As things stand this isn’t a meal we’d be rushing to make again.
