Spinach sausage bake

After a long and activity-packed day in Oakwood with the scout pack, I was after a straightforward meal that would use up the leftover sausage sauce we had earlier in the week.

 

Layers of penne, spinach and sausage sauce

M was round for tea too, so this pasta bake was just the ticket. It was inspired by a BBC Good Food recipe for rigatoni spinach bake, but encompassing the leftover sausage sauce and a mix of spinach, watercress and rocket.

Baked and bubbling

A great way to re-invent sausage sauce, and the leafy greens are a nice addition. Great with petits pois.
