Refried bean quesadillas

Our Thursday nights tend to be vegetarian, and this is no exception. A cheap and cheerful meal that’s easy and packs a bit of punch, this is a definite addition to our repertoire.

It’s a BBC Good Food recipe, which I’ve changed a little: I’ve learned that quesadillas are much easier when you fold a single tortilla over rather than using two (much simpler to turn). In place of salsa I added diced tomatoes to the cheese and refried beans. Some finely chopped pepper would have been good too.

Absolute top tip: use a pizza cutter to slice into wedges. And if you’re slicing pizza – use kitchen scissors. Honest! Feel free to thank me in the comments when you see how well it works…
