Chunky sausage sauce

An old standby that is pretty adaptable, this is a simple meal to throw together that benefits from some time simmering on the stove.

You can almost make out the pasta shapes...

 Chunky sausage sauce (serves 4)


4 butcher’s sausages
1 onion, chunkily diced
1 pepper, chunkily diced
1 clove garlic, crushed
hot chili powder, to taste
2 tins chopped tomatoes


1. Grill the sausages and put to one side

2. While the sausages are grilling, fry the onion until brown

3. Reduce the heat and add the pepper, garlic and chili powder to the onion

4. Add the tinned tomatoes, season and leave to simmer for half an hour

5. Using kitchen scissors, chop the sausage into the sauce and allow to heat through.

I have a weakness for novelty pasta shapes and my Mum picked us up some organic Scooby Doo tricolore pasta recently which is just fabulous with this. We have some leftover mozzarella in the fridge, so used it to finish the dish – the creaminess is a lovely counterpoint to the heat of the sauce.

This freezes well, so I used to batch cook it and freeze the excess in two person portions as a home-made ready-meal solution.

    Very simple, but so delicious! I can imagine it being nice to try different flavoured sausages too. I also freeze batches of pasta sauce – simplest supper ever!

    It’s great with red onion sausages, and you can change the ingredients to fit what you fancy. Home-made meal-in-a-microwave quick fixes are the best, aren’t they? Lasagne and curry were my other favourites. Sadly, this year the terms of the challenge mean I’m pretty limited on my batch-cooking options! (Or we have them for lunch on the weekend)
