Vegetarian fajitas

A simple one this: fry half an onion (sliced), three peppers (sliced) and half a packet of chestnut mushrooms (quartered) in a generous amount of fajita seasoning. Wrap in toasted tortillas with salad and soured cream.

Vibrant colour

 

The mushrooms add the ‘meatiness’ and the soured cream and salad moderate the heat of the fajita spice. Be careful not to over-do the tortillas or they’ll get too crispy to roll.
