Sticky ginger and lime drumsticks with corn-on-the-cob

Another glorious sunny day in Cardiff, perfect for an evening of stuck-in-the-mud, cops and robbers, hide-and-seek tag and magic corners in the field next to the Scout Hut. For a quick and easy meal that provided enough energy for all that running around and had the barbecue flavours of the summer, we had sticky chicken drumsticks and corn-on-the-cob with a red pepper and green leaf salad.

I really must buy corn holders

I marinaded the drumsticks overnight, using a recipe of my own invention inspired solely by what I had to hand: lime juice, ginger paste, soy sauce and honey. An eclectic mix that works pretty well.

The sweetcorn was simply wrapped in kitchen foil with butter and roasted in the oven for forty minutes. We could certainly do with having corn more often.
