Nigella Lawson’s spring chicken

Another recipe from Nigella Lawson’s Kitchen, this dish is full of the promise of summer, so particularly apt for a rainy day in June.

Lovely with pasta, but you could have it with rice or cous cous

It’s simply chicken thighs cooked with bacon, leek, garlic, petits pois and cider, finished with a touch of mustard and wilted lettuce. It takes about an hour, but it’s worth the time investment – Sundays are meant for slow-cooking.

This smells lovely as it simmers away on the hob, and the chicken is meltingly succulent falling-off-the-bone perfectly done at the end. There’s plenty of sauce to the dish, which is we generously spooned over the pasta so as not to lose any of the flavour.
