Cajun pork with chargrilled peppers and ale

It’s another blazing hot day in Cardiff, and the perfect weather for this delicious barbecue recipe from BBC Good Food, which is easily adapted for oven-cooking. I changed it slightly to use ready-mixed cajun spice and substituted a green pepper for red.

Absolutely scrumptious dished up with perfectly fluffy white rice and shredded lettuce, which provide a lovely contrast to the sticky, spicy hit of the pork and pepper sauce.

Incidentally, this it the first time I’ve chargrilled peppers, and it’s not half as much faff as I’d thought. Lovely texture, too.

My first home-made cake

We had marble cake for dessert (again from the BBC Good Food website) – the first cake I’ve made and it came out surprisingly well. Convincingly cake-y. I want to make this again with food colouring and psychedelic colours.
