Welsh rarebit

Welsh rarebit is one of those recipes that no two people can agree on, like spaghetti bolognese or egg fried rice. And it’s the Rolls Royce of cheese on toast.

This is my version – I’ve made it this way for years and it’s the perfect comfort food when you come in from a cold evening. It’s an artery-clogger, so one to have as a very occasional treat.

Golden and delicious

Welsh rarebit  (serves 2)


2 slices of wholemeal bread
1 egg
75g strong cheddar
1/4 t mustard
1/4 t Worcestershire sauce
Freshly ground black pepper


1. Toast the bread on one side.

2. While the bread is toasting, beat together the wet ingredients.

3. Grate the cheddar into the mix, combining until you have quite a thick paste.

4. Add a generous addition of black pepper and spread evenly over the untoasted side of the bread.

5. Grill under a low heat until cooked through and golden.

This is the ultimate hangover cure – especially if you believe in the hair of the dog: add a drizzle of beer to the wet mix and finish the can with the finished rarebit. You may need even more cheese.
