Coriander chicken skewers with a bulgar wheat and corn salad

A quick and simple meal that pulls together some great ingredients (chicken, sweetcorn and baby plum tomatoes, just to start) this was a great quick-fix on a theatre night. Taken from the BBC Good Food website, this took just 25 minutes to put together, cook, serve and eat, leaving just plenty of time to collect our Dylan Moran tickets from the box office at St David’s Hall before the show.

I changed the recipe slightly by grilling the tomatoes with the chicken for a sweeter, smokier flavour, which worked well. In future we’d probably pimp this up a little with some chili, some chopped pepper and a liberal helping of freshly squeezed lemon.
