Courgette lasagne

I’m always delighted to find vegetarian meals that are so tasty you don’t feel that they’re ‘missing’ the meat content, and this is one such gem, from the BBC Good Food website. It calls it a quick courgette lasagne, but lists an even faster meal for more with very similar ingredients. Nonetheless, it’s delicious, and a doddle to knock together – especially with our new beloved food processor.

Having read the recommendations I added half a red onion and some garlic to the courgette mix. The pasta sauce was my own and I used single layers of dry lasagne sheets rather than fresh. Finally, I swapped ricotta for cream cheese and was generous with oregano and fresh basil sprinkled liberally over the dish just before putting it in the oven.

Chock-full of flavour, this is delicious with the simplest of salads. I dished it up with a handful of watercress and spinach dressed with olive oil and lime juice. Lovely.

If you’ve been following the challenge, you might be interested to know that this is meal 150 – just 215 more to go. I’m very much looking forward to hitting the halfway mark on July 3rd!

    Something I never thought of putting in lasagna.

      I’ve had the leftovers for lunch two days in a row, and it really is rather delicious. It seemed a little too courgette-y when I was cooking it, but definitely passes the taste test!
