Chicken and asparagus pie with a breadcrumb topping

It’s still British Asparagus season and I’m trying to use it in as many different ways as I can. Tonight’s recipe is yet another gem from the BBC Good Food website, and I’ve only changed it slightly to substitute bacon for ham, which meant baking rather than grilling to ensure the whole dish was cooked through.

Ready for breadcrumbs and the oven

The medley of spring vegetables provides a deliciously fresh base for the chicken and the bacon, and the breadcrumb topping adds a scrumptious crunch. The whole thing is deliciously tasty and surprisingly healthy, as well as being pretty quick and easy to make. Although less visually attractive, it may be worth snapping the asparagus into bite size portions to make it simpler to serve.
