Moroccan chicken with cous cous and yoghurt

A recommendation from my lovely sister, the recipe for this meal is on the BBC Food site. As a fan of the slow cooking movement I enjoyed savouring the mingling aroma as it simmered on the hob – I rush so many meals in the week that it’s nice to take some time over a dish on the weekend.

With a drizzle of natural yoghurt

When I make this next I’ll add the apricot and half a red pepper to the cous cous, separating out the flavour from the sauce. The yoghurt added very little to the dish, so I’d probably omit that in the future.

The slow-cooked chicken was meltingly delicious, and certainly worth taking the time to simmer slowly.
