Cajun turkey with quinoa and lentils

Something totally different from the Italian pizza, pasta and risotto theme we’ve been on recently: a spicy, super-healthy meal with a New World flavour. It’s a BBC Good Food recipe, with the chicken substituted for turkey.

A medley of flavours

Ready in forty minutes, and simple to make. I think this would be improved by adding some chopped red bell pepper and upping the cajun.

Incidentally – check out my beautiful pink frying pan. It’s a gift from C, who gives amazing presents, and it makes me smile every time I use it.
