Pitta pizzas

A nifty little recipe that packs plenty of flavour, you could make this in no time at all if you’ve got a ready-made sauce to hand.

To make the sauce, I simmered 1/2 an onion, finely chopped, in a pan until softened. I added a tin of tomatoes, seasoning, basil and a teaspoon of sugar and allowed to reduce on  a low heat for about forty-five minutes. Once thickened, I spread the sauce over wholemeal pittas, topped with sliced grilled bacon and torn mozzarella, and baked in the oven for fifteen minutes. Very tasty, and so simple.
