Flambéed chicken with creamy asparagus and roast potatoes

May 17, 2011

Lovely soothing comfort food on a day where I’ve achieved little more than getting out of bed and drinking Lemsip. It’s yet another brilliant BBC Good Food recipe.

Crunchy roast potatoes, British asparagus and flambéed chicken (more asparagus hiding round the back)

H stepped in for the flambé part, as risking injury alongside illness seemed positively foolish. It’s great fun and looks rather impressive. We didn’t have any brandy, but rum is a good substitute – so long as it’s 40%-ish it will light.

The roast potatoes looked recipebook-worthy and were beautifully crispy: sizzling hot olive oil and roughed up boiled potatoes are a great combination. I had fusillini instead, which was much kinder on a sore throat.
