Falafel pitta burgers

This meal is so simple with my new shiny lovely food processor. It’s a BBC Good Food recipe, and it has more comments and positive ratings than any other recipe I’ve seen on the site.

Serve with plenty of salsa

It’s really straightforward to make. I bought a mild salsa, but a hot one would work well and I really should make my own. I’ll certainly add more lemon and mint yoghurt sauce the next time we have these (thank you, L, for the suggestion!). The watercress has a nice snap to it, but the crunch of sliced cucumber would be a welcome contrast to the softness of the falafel.

A handy meal to have up your sleeve that suits vegetarians, but won’t have your carnivores sulking about the absence of meat.
