Jamie Oliver’s piri piri chicken

It’s been a while since we cooked from Jamie’s 30 minutes, and there were meals I’d been putting off until we had a food processor to blitz pastes – one of which was Jamie’s piri piri chicken, which my mother recommended a while back. We skipped the Portuguese tarts as it’s just too warm for a baked dessert as well as a cooked dinner.

The flavours and the colours are punchy and vibrant. It’s great to make a piri piri sauce without using a dry spice mix and it really does perk up a rather cheap cut of chicken. H likes the feta and sweet potato combination, and a green, leafy salad can’t fail to be a winner in this weather.
