Mustard-stuffed chicken

An old favourite from the BBC Good Food website, this meal is simple to throw together and is packed with flavour. You can substitute the mustard for pesto (red or green) if you want.

With a green salad and oven fries

If the mustard and cheese mixture bubbles out into the roasting tray (as mine always does), just scoop it over the top of the chicken when you serve. It may not look like much, but it tastes delicious!

We had ripe avocado and tomatoes begging to be eaten, so I used the leftover mozzarella to knock up a lazy little insalata caprese – it would have been rude not to.
