Pea, sausage and tomato red pesto pasta

A fab little recipe from the Yes Peas website as recommended by my sister-in-law; a site that deserves extra recognition for resisting the temptation to have ‘recipeas’.

Give peas a chance… (sorry)

Did you know that just one serving of freshly frozen garden peas or petits pois contains as much vitamin C as two large apples, more fibre than a slice of wholemeal bread and more thiamine than a pint of whole milk? Nor me – and yet these guys can not only tell you that the first colour television advert was for Birds Eye peas (in 1969), but also how many peas it would take to outline the British coast. Go on – check it out! Did I mention they have recipes too?

I altered the recipe slightly – wholewheat penne instead of rigatoni, petits pois for peas, baby plum tomatoes for cherry tomatoes and chipolata sausages instead of standard (but Sainsbury’s Finest outdoor-bred happy pig ones).

I also grilled the sausages rather than frying them and added the tomatoes to the oven to roast as H hates raw tomatoes.

But the spirit of the meal was the same, and it met with firm approval from H while I baggsied the leftovers for lunch tomorrow. Quick, simple and scrummy – what’s not to like?
