Jollof rice with chicken

Yet another BBC Good Food recipe, this is a handy West African dish that used up leftover okra and chicken from earlier in the week; ‘jollof’ means ‘one pot’ in the Wolof language spoken in Senegal, The Gambia, and Mauritania. However, as spicy one pot chicken and rice recipes go, it had nothing on the jambalaya we had earlier in the year.

We spent the afternoon sun-worshipping in Bute Park and taking photographs of the local wildlife (mostly hyperactive squirrels), so had no battery left in the camera for a photo, but this isn’t  a splendidly photographic meal either. Not a dish we’re likely to have again.
