Chicken and roast pepper quesadillas

Quesadillas – quick, low-carb, exotic toasted sandwiches. You can mix up the content so long as you include a cheese that melts well – we used a sliced cooked chicken breast, sliced red onion, roasted pepper antipasto and cheddar. Scatter on one half of a tortilla, fold and griddle, remembering to turn carefully. Do serve with salad: it all comes together really well. Another meal that takes a handful of ingredients and less than 20 minutes, which is just you want for midweek. It’s more filling than you’d think too.
