A mascarpone carbonara

Four ingredients and twenty minutes are all you need to make this easy midweek filler from the Good Food Channel website. Combining bucatoni, mascarpone, garlic and bacon for a delightfully stodgy meal, this is just the ticket as the weather’s cooler and I’m home quite late. I added a splash of lemon juice to lighten the dish a little.

With plenty of fresh-ground black pepper

This is the pasta equivalent of a cheese and bacon toastie, and a similar level of effort. The quantities are easily increased too; this fed H and I with leftovers.
