A very, very green pasta dish

April 11, 2011

This would be fabulous to make at Hallowe’en just because of how wickedly green it is.

It looks like I’ve used coloured pasta, but it’s plain-old egg trotolle under the green

And it’s full of healthy spinach (and not-quite-so-healthy mascarpone). It’s also a handy store-cupboard standby that just needs a bag of spinach and some pasta, pinenuts and the afore-mentioned mascarpone with garlic and lemon juice and can be knocked together in less than 20 minutes.

It’s also another BBC Good Food meal; because I now spend more time on their site than I do on Facebook. They call it a glorious green sauce, and quite rightly so as it really is quite stunning. If you’re feeling carnivorous you can grill some bacon and slice it into the sauce. Lovely…

Incidentally, this is also meal 100 of the challenge. Triple digits!
