One-pot chicken pilaf

A simply spicy one-pot that’s fabulous for using up leftover veg or can be rustled up using freezer ingredients, this BBC Good Food recipe has H head back for seconds while I check there are enough leftovers for lunch.

 

With spinach and frozen mixed veg

A lovely oomph and a great way to use leftover chicken thigh fillets without the need to marinade.
