Braised chicken with chorizo and butter beans

Another handy recipe from the BBC Good Food site, this meal is simple to throw together and the contrasting flavours and texture complement each other wonderfully. Having read the shocked comments about the calorie content, I substituted four bone-in skin-on chicken thighs for two skinless chicken thigh fillets, and dished it up with a rocket and peashoot salad and a side of wild rice.

With the smaller portion of chicken, this was just enough for two without leftovers. The next time I make this I’ll bulk it out so as to have extra left to have for lunch the next day.
