Courgette carbonara

This is a fabulous meal which we’ll certainly be making again – the BBC Good Food website’s healthier take on carbonara with grated courgettes. I also swapped the single cream for low fat crème fraîche for extra goodness. Quick, easy and rather scrummy.

Ready in less than 20 minutes

I speed-peeled the courgette, rather than grating it – it means you have lovely vibrant ribbons of green mixed through the dish. H and I both went back for seconds.
