Trotolle chorizo with rocket

A last-minute, late-night creation, this dish threw together leftovers from recent meals with quite satisfying results: the onion, red pepper, chorizo and tinned tomatoes leftover from the jambalaya formed the basis of the sauce, which was combined with crème fraîche, red pesto and trotolle from our Zizzi-inspired meal and finished with rocket left from the sausage and fettucine dish we had yesterday.

We added the rocket right at the end so it barely had time to wilt

So lush that H has already shotgunned the leftovers for lunch tomorrow. Another happy discovery from impromptu changes to the meal plan.
