Sausage, chili and rocket fettucine

One of those fabulous five-ingredient, twenty-minute meals that it’s so handy to have up your sleeve, this BBC Good Food recipe is a fantastic midweek meal with plenty of zip to it.

A lighter sausage and pasta dish

I tweaked the recipe by adding a spoonful of red pesto and substituting crème fraîche for single cream. It’s very easy to change the spice factor by varying how much chili you slice in.

One of the best things about this challenge is the number of tasty midweek meals we’ll be able to knock up in less than half an hour with a handful of ingredients at the end of it. With 270 meals to go, I’m hoping we find a few more like this, the courgette linguine, harissa chicken and jambalaya, as well as all the other scrumptious new meals we’ve discovered of late.
