Red Thai chicken noodle broth

This was a stove-top version of a BBC microwave meal that looked straightforward and tasty; ideal for someone like me who doesn’t cook much Occidental cuisine.

Just before adding the stock, coconut milk and rice noodles

It smelt delicious, but the texture wasn’t quite right; far too much liquid. I’m not sure if it was my cooking or the recipe at fault, but this wasn’t great and we weren’t inspired to try it again.

This wasn’t a “great, if only…”, it was an “alright, but…”
