Harissa chicken skewers with pea shoots

It’s been a long day with another one to follow, and we’re losing an hour tonight as we go into British Summertime, so we wanted something quick and easy that didn’t create much in the way of washing up. This is a variant on chicken tikka skewers, an age-old favourite of ours in the Summer,  but with harissa paste and a shorter marinade time.


Just starting to get that slight charring effect


We served this with lettuce, cucumber, romano pepper and pea shoots. Light and luscious; H says he’d happily have it again and I agree. This is a great five-items-or-less, 30-minutes-or-under meal to perk up the end of a long day.
