Springtime pasta

This is a beautifully simple after-work meal that’s wonderfully seasonal right now: BBC Good Food’s springtime pasta with kale and bacon. The whole thing takes about 20 minutes, two pans, one knife, a chopping board and a pair of kitchen scissors. Lovely!

I swapped out penne for gigli (a flower-shaped pasta – gigli is Italian for “lilies”) and substituted goat’s cheese for extra mature cheddar due to a refrigerator malfunction. I love the full flavour of the kale and the slight sweetness of the softened red onion, which work beautifully with the smokiness of the bacon.
