Harissa chicken with apricots, red pepper and bulgar wheat

This is another BBC Good Food recipe and there were two things that I was unsure about: bulgar wheat’s a new ingredient to me, and I’ve never cooked fruit in savoury dish before. As it turned out, this turned out to be absolutely delicious – a definite keeper.

I’ll definitely be on the lookout for more meals with bulgar wheat and we’ll be experimenting with more recipes that incorporate fruit. It’s discoveries like this that make the whole challenge worth the effort.

I used one of the suggestions in the comments and added diced red pepper to the dish, before serving it with rocket dressed in lemon and olive oil.
