Spaghetti with courgette, baby plum tomatoes and bacon in roast pepper pesto

A twenty-minute meal with just five ingredients (plus olive oil and cheddar), perfect for a quick weeknight dish.

Good enough to eat straight from the pan

It’s yet another BBC Good Food recipe (I am enormously indebted to the wonderful people at BBC Good Food, without whom this challenge would be a right ‘mare).

H isn’t fond of traditional basil pesto (“tastes like grass”), so I’m using a roast pepper version instead, and I’ve replaced the cherry tomatoes with the baby plum variety as I think the flavour is so much more intense and far sweeter.

Quick, simple, tasty and easily adapted – change the veg, change the pesto, change the pasta. Fabulous.
