Caribbean chicken with zesty spring onion sauce, rice and beans

We holidayed in Barbados some years back, and have fond memories of the punchy flavours in the food we tried, as well as the sunshine and the fantastic music and entertainment. In a determinedly cold month of March, this BBC Good Food recipe is a very welcome reminder of the Bajan sun.

Simple, spicy and full of sunshine

This is a ludicrously easy way to cook chicken, and the end result is tender and succulent, with a spicy crust. The zingy zestiness and the emerald hue of the sauce really lift the rice and beans. And, as an additional bonus, it’s low in fat and calories. Love it.
