Italian-style beef stew

Yet another delicious BBC good food recipe. I wouldn’t be able to contemplate completing this challenge without their website!

It’s pretty simple: fry onion and garlic, tip into casserole dish, add thinly-sliced beef and pepper, pitted olives and tinned tomatoes, season and cook. Simples…

Just add tomatoes and slow cook…

Nice and easy with lovely colours. H had it with the last of the leftover mash and I had penne. The recipe suggests cous cous could work, which I’d like to try, and H suggests rice would work. We have enough leftovers to try both.
