Saucy meatballs with rice
This is one of Sainsbury’s 5 family meals for £20 meals, and as it nears the end of the month I’m looking for some quick, easy and cheap meals to put together.
I tinkered with the recipe, adding spring onion to the meatballs and red pepper to the sauce, partly to use up leftovers I had in the fridge, but also as it looked a little bland.
Sadly, the end result was so disappointing that we couldn’t actually bring ourselves to eat it – the meatballs were tough, the sauce was tart and it tasted cheap and uninspired.
We have a favourite meatballs recipe that’s based on one of Delia’s and takes ages to prepare but tastes lovely, and isn’t much more expensive. Perhaps that skewed our expectations upwards.
Anyway, we end up eating the rice with yesterday’s spicy Spanish chicken and the bag of discounted ‘bistro’ salad I’d picked up on the way home. Bizarrely, because of how spicy the sauce is, we prefer this to yesterday’s version with pasta. So it all worked out in the end.
