Pork schnitzel with creamed spinach

Tonight saw a continuation of the pork theme (it was a multi-buy). I trimmed the fat off the steaks, dunked them in beaten egg and then rolled them in a mixture of breadcrumbs and grated cheese before frying for five minutes on each side in a griddle pan. I re-used the creamed spinach recipe that accompanies Jamie’s tray-baked chicken and added a side of oven-baked french fries. The whole meal took about 20 minutes from start to finish.

H enjoyed this – I’d happily make it again as a quick mid-week fix. If I ever find pork steaks on the reduced shelf at the supermarket I’d pick them up with a bag of spinach and rustle this up in a jiffy.
