Corn and chili-stuffed cheesy peppers

A delicious vegetarian concoction full of goodness from the ever-so-lovely BBC Good Food website. We had this with fluffy basmati rice.

I have form for ‘tweaking’ vegetarian recipes – mainly by adding bacon to them. But this was rather lovely as it was, and packed with flavour as well as being virtuously packed with veg.

I found out some time ago that you can freeze chilis – so it’s well worth buying a mixed packet and stuffing it in the freezer so you’ve always got some fresh in the house. Simply revive them in a cup of hot water and slice. Fabulous! I also keep an emergency quarter pint of milk stashed away. And did you know cheese freezes wonderfully? It just stops the ripening process, so it won’t mature once defrosted.

I love my freezer.
