Jamie Oliver’s tray-baked chicken

After the slight disappointment of Jamie’s spaghetti puttanesca, this meal totally renewed our faith.

The chicken was delicious and so easy to cook. The paprika and oregano combine beautifully with the bacon. The creamed spinach is really lifted by the spring onion and the aroma of the potato skins crisping fills the kitchen with the promise of scrumptiousness.

This meal demands to be plated properly; the chicken atop the spinach circled with the potatoes and roast cherry tomatoes, drizzled with the pan juices. It looks so stunning that I resolve to get a camera so I can start adding pictures to this blog.

Impressive enough for a dinner party without taking much effort to prepare.
