Cheat’s pizza

Today calls for something very simple, and the leftover pizza sauce from the Tricolore Pizza comes in handy. Combined with value mozzarella (well, you’re cooking it – you won’t notice), decent ciabatta (because you will notice the quality of the pizza base) a green pepper and some grilled bacon, we have a quick and easy meal.

I brush the ciabatta halves with olive oil before adding the sauce to stop it getting soggy, tear the bacon and the mozzarella (bacon first so it doesn’t burn under the grill) and top with thinly sliced pepper. If you have it, rip basil leaves over the top and crack fresh black pepper over to finish. As the sauce is cold going on I cooked this in the oven for ten minutes before grilling for a crispy finish.

If you’re feeling up to it, rustle up a quick green salad too.
