Beef, ale and mushroom pie

I used a BBC Good Food menu as the basis for this, halving the quantities and with only a quarter of the beef, and even so ended up freezing half the beef mixture. As it’s a midweek meal, I also cheated and used bought puff pastry.

Cooking the beef the day before and allowing to cool then settle for a day really allowed the flavours of the dish to deepen and mingle, as well as making it a Monday night meal that just needs construction rather than cooking. Distracted by another project I allowed it to cook too long and didn’t give myself time to prep the veg to cook with the peas.

I hope to do this better justice in the future, and plan to make it again with the frozen mix.
